So now I'm dressed for the gym; keep checking the classes schedule to see what's happening this evening but the choices are greatly reduced in the evening...looks like I'll be hitting the machines to do some strength training. I try to do that every other day, doing just cardio on the alternate days.
Sara's been in a cookie-baking mode lately but thankfully she brings them to work. Today she made Chewy Chocolate Cookies w/ white chocolate chunks, and left one apiece for Becca and I. That was fine with me! It was soft, and incredibly chocolate-y, and just enough to get the flavor but not overdo. "I hadn't had ice cream since December. Strangely, I didn't feel all that bad about eating it. (Ben & Jerry's!!) I hadn't purposely strayed from my diet since I'd started. It felt good to break the perfect spree. Being perfect was way too exhausting. I'd had my ice cream. I'd enjoyed it. Now I'd just get back on track and make sure this didn't become a habit." (Jennette Fulda)
Today's Plan:
AM: 1 cup whole-grain cereal w/ craisins & walnuts/1% milk/coffee
Snack: Handful almonds
Lunch: Baby carrots w/ hummus/Lean Cuisine entree/caramel rice cake
Snack: Pkg'd rice crispy treat/coffee/Chocolate cookie
Dinner: Steak Salad/bowl of frozen fruit
Snack: Popcorn w/ peanuts
Exercise: Cardio (15 min) and weights (30 min)
Today's Goal: Get through a Friday evening w/out eating out of Plan!
Here's a recipe from one of the blogs I follow:
Ingredients:
1 pkg. boneless, skinless chicken breasts
1 pkg taco seasoning (I used Old El Paso, reduced sodium)
1 small jar Pace picante sauce
I put the chicken in first, then the seasoning, then the Pace. I doubt it matters what order. On high this could be ready in a few hours, on low probably 5 hrs. would do. Whenever you can easily shred the chicken with two forks, then it is ready.
Serve on corn tortillas (a whole grain food) with nutritional extras such as plain Greek yogurt, more salsa, pico de gallo, lettuce, a low fat cheese, tomatoes, cilantro, lime, etc.
